If you sometimes battle to get your kids to eat their vegetables on a daily basis why not try turn them into something fun! We love this quick easy recipe for butternut crumpets and are yet to meet a kid who does not want to gobble down the entire plate – adults too! Enjoy 🙂

Ingredients :
1 medium size butternut, peeled & cubed
2 eggs
4 tblsp flour (we like bran rich self raising flour)
Pinch of salt, to taste
1/4 tsp cinnamon
Spray ‘n Cook for cooking
Oil for cooking

Method:
Steam the butternut until very soft.
Mash the butternut in a large bowl.
Beat in the eggs, flour, salt & cinnamon until combined well.
Spray with Spray ‘n Cook & heat a large flat based saucepan or frying pan on the stove top. Once hot add a thin layer of oil to the pan.
Using a dessert spoon ladel the butternut mixture one dessert spoon at a time into the saucepan, allowing enough spcae in between each one for flipping.
Cook on one side until golder brown (about 2-3 minutes) before flipping with a spatula & cooking the other side until golden brown (about 2-3 minutes).
Serve hot with extra cinnamon (we also like some honey for a bit of sweeteness at breakfast time) otherwise with some melted butter for a savoury option.
