Who doesn’t enjoy a dish containing slow cooked meat of any type? Here I give you a super easy and healthy version of slow cooked beef.

Preparation Time: 20 minutes
Oven Time: 3 hours
Serves: 5 – 6 people

Ingredients:
1 large onion, peeled and diced
2 cloves of garlic, peeled and minced
3 large tomatoes, washed and chopped
1 large carrot, washed and grated
1 sprig of basil leaves
1kg silverside beef
100ml balsamic vinegar
1 tsp salt
1 tsp pepper

Method:
Preheat the oven to 180 degrees.
Spray and cook a 30cm oval cast iron pot that has a lid.
Place the onion, garlic, tomatoes, carrot and basil into the pot.
Trim off all visible fat from the meat. Place the meat on top of the vegetable.
Pour over the balsamic vinegar, then add the salt and pepper.
Put the lid on and place the pot into the preheated oven and leave to cook for three hours.
Once cooked remove the pot from the oven.
Take out the meat and shred with two forks. Place the meat back into the pot and mix together with the cooked vegetables.

Serving Suggestion:
Serve the pulled beef as a filling for sandwiches or wraps with fresh salad. Top with a homemade yoghurt dressing or hummus.
